Serves: 6 People
Cabbage: 2 cups of cabbage – chopped
Beef Broth: 3 cups of non-fat beef broth
Garlic: 2 cloves of garlic – minced
Carrots: ½ cup of carrots – chopped
Tomato Paste: 1 Tablespoon
Yellow Onions: ½ cup – chopped
Zucchini: ½ cup of yellow or green zucchini – chopped
Extra Virgin Olive Oil: 4 Tablespoons
Oregano: ½ teaspoon
Basil: ½ teaspoon
Pink Himalayan Salt: 1 tsp, or to taste
Black Pepper: 1 tsp, or to taste
- Add olive oil to a large soup pot and saute the garlic, onions and carrots for 5 minutes.
- Then add the beef broth, cabbage, basil, oregano, salt and pepper to the pot, and let it simmer for another 5 minutes.
- Add the zucchini and tomato paste, and let it simmer for an additional 10 minutes.
- Dish out the soup into bowls and enjoy.
